Do you have your turkey already? If you bought it frozen, make sure you plan ahead and give yourself enough time to thaw it out properly.
An average 12-pound turkey will take about three days to thaw completely in the fridge and be ready to cook.

If you’re buying an 15-18 pound bird, add another day or two.
If you’re brining, you don’t want to do that until it’s thawed. Factor that in as well and then mark the date on your calendar.
