TENNESSEE VALLEY - The food truck frenzy has arrived in the Tennessee Valley.  We are salivating for the variety they offer and their tasty dishes on demand.

But don't think it's easy work being in the food truck business.  Food trucks not only have to follow the same health and safety standards as regular food establishments, they also have to have a commissary permit.  Meaning, an additional work space where they prepare and hold their food.  That means 2 health scores.  One for their mobile eatery, and the other for their commissary.

We caught up with the Fire & Spice food truck to see how they operate.  Watch as the owners shows us what it takes -- to keep a clean rolling kitchen!
