Jerry shares a few of his favorite dishes in Health Matters

HUNTSVILLE, Ala. - Many of you have commented to Greg Screws and me you can tell we’re losing weight. And that’s good because it shows our hard work is paying off. We’re both still counting calories, eating healthier and working out at the gym.  We’re still on the journey and know that this is a marathon, not a sprint. And because we’re watching what we eat, I’ve tried some new variations on old favorites. I thought I’d share a couple of them with you.

Here's a quick and easy tuna wrap. Start with a 4 ounce can of tuna. Drain it of course. I use the solid white albacore. You’ll need one whole sweet pickle, one tablespoon of mayonnaise and a burrito size whole wheat tortilla.

Cut up the pickle and add it to the tuna and mayo. Mix it in a bowl and then plop it onto the tortilla. Fold the ends. Bring in the sides and you have a great wrap for lunch and it’s only 430 calories. You could also cut up a hard-boiled egg and mix that in as well. Add some lettuce and tomato if you so desire.

Before I started this Health Matters journey, I would walk into the kitchen after work, open the freezer and grab the ice cream. I don’t do that right now. I’m trying to cut calories and stay below 1,800 calories a day. Instead, I make a healthy snack. Here’s one of my favorites.

You’ll need six Triscuit crackers. I love the roasted garlic ones. Slice a Roma tomato and cut a mozzarella string cheese stick in half and pull it apart.

Once you plate the crackers, add the slices of tomato and top that with some cheese. Even if you eat all of them, it's only 220 calories. It’s almost like being at a party and enjoying some healthy finger foods! And if you watch the video, you’ll notice I dug the Sesame Street plate out of the cabinet for this story because nothing says snack like "Yummy, yummy, food in my tummy." Enjoy.
